Hello, all.  I’m at work tonight & will check in as soon as I get home.

What is your favorite comfort food?

I like (s)mashed potatoes & gravy.

Ham steak & hominy (one ham steak, two cans of whole hominy, drained.  Sear the steak on both sides, remove from pan.  Add the hominy to the skillet & stir to scrape up the ham bits, then put the  steak on top of the hominy & put the whole skillet into the oven [350] for about half an hour until the ham steak is cooked through and the hominy has browned a bit & absorbed the ham flavor.  Serve with your favorite green veggie:  I like spinach).

There’s always chicken & dumplings or chicken & waffles: both are excellent. If you have some fresh tarragon, mince it up & add to the dumplings or to the chicken gravy.

But where I live, the most famous comfort food is chicken pot pie (bot or bott boi), which is a kind of chicken & noodle dish.  Unlike the pot pie enjoyed by the rest of the nation, the Pennsylvania Dutch version is more like a stew: no crust: and includes saffron, which the Amish & Mennonites grow here.

Besides chicken & chicken broth, the recipe includes those bot boi noodles, carrots, potatoes, the aforementioned saffron, flour&butter for gravy, and peas.  I would add chopped onions & maybe chopped celery.  You can Google for a real recipe: but the peas were always de rigeur when I was growing up.  It’s one of those recipes you can play with: there are as many different versions as there are Amish & Mennonite & assorted other PA Dutch cooks.

So, what are your favorite comfort foods?  Recipes most definitely requested!

    Well, that and just about all breakfast items.

    A chicken pot pie without the crust is blasphemy.

    no matter how ill i am or how down i am smashed taters (w/ sour cream & lotsa butter) always makes me feel better.

    i also adore:

    hot cocoa & cinnamon toast

    busketti & clams

    albondigas (taters, meatballs, chick peas & chorizo stewed together)

    anything breakfasty

    especially after coming in from shoveling snow. In the summer, it’s grill catch of the day at the beach, fresh dug clams and toasted marshmallows over an open fire.

    Twinings African Honeybush Tea – good luck finding that one.

    All three to end the day. In moderation, of course.

    For meals – fresh Georges Bank scallops. In season, local blue fin tuna and swordfish.

    For breakfast, blueberries, raspberries, strawberries and bananas on top of some cereal. Hot oatmeal this time of year.

    My husband makes amazing potato home fries.  And anything with rice pasta.
