Beyond Pesto: New Ideas for Basil

Basil contains flavonoids that are believed to have some antioxidant properties; it’s an excellent source of vitamin K, and a very good source of iron, calcium and vitamin A.

Pots of Basil will also keep away flies although it is unclear why, possibly the fragrant oils. The oils have also shown to inhibit the growth of some pathogenic bacteria that has become resistant to antibiotics.

Greens for the Summer Heat

Spinach is the green that comes to mind for light summer dishes. It’s available year-round both at farmers’ markets and supermarkets, wilts in minutes, and afterward keeps well in the refrigerator.

In summer, you can use it for cold soups or quick omelets, or combine it with seasonal tomatoes in easy pastas. Spinach contains iron, vitamin A and vitamin C, manganese, folate, calcium, potassium and a variety of other nutrients.

One thing to note: The sodium content can be high in some brands of bagged spinach. A 3-ounce serving of Dole organic baby spinach, for example, contains 135 milligrams of sodium. The same amount from Fresh Express contains 65 milligrams. The difference may have to do with the solution that certain commercial producers use to wash the spinach.

If you do use bagged baby spinach, check the values on the package. A 3-ounce serving (85 grams) should not have more than 70 milligrams of sodium.

Pan-Cooked Summer Squash With Tomatoes and Basil

This Provençal summer dish is delightful as a starter or as a side dish with fish, chicken or cooked grains.

Spicy Grilled Zucchini

This mildly spicy dish from southern Italy can serve as an appetizer or side. Cut the zucchini on the diagonal into long, thin slices, or cut it lengthwise.

Cumin-Scented Summer Squash Salad

The summer squash is lightly steamed in this North African salad.

Marinated Zucchini Salad

Raw zucchini can be a dull ingredient, but when it’s very thinly sliced it marinates beautifully, especially in lemon juice.

Shells With Summer Squash, Corn, Beans and Tomato

You can use canned beans for this dish, but if you happen to have cooked pintos or borlottis in broth, use the broth for the pasta sauce.

An Ode to Runny Eggs

Today, I’m using unsalted butter (I bet we used margarine at camp), a thick slice of really good white or whole wheat country bread and a sunflower-yellow, pastured egg. My “grill” is a well-seasoned cast-iron skillet set on the stove and, after a long egg-in-a-hole hiatus, I’m smitten. I’d forgotten how utterly perfect this meal is.

Fried Chicken Stars in This Make-Ahead Meal

The usual strategy for a make-ahead summer meal is a spread of salads and poached fish, which is fine in June but grows wearisome by August.

Instead I suggest taking another path entirely: fried chicken.

A longtime picnic staple, chicken is one of the few fried foods that tastes as good at room temperature as it does warm. And with a few minor tweaks to the classic recipe, this version holds up particularly well, remaining crisp and well seasoned for hours out of the fryer.

A great way to work more beans into your diet, this week’s pâtés work as spreads on whole-grain bread or crackers. They slice up nicely, too, so you can serve them alongside a salad or vegetable dish. Unmold them from the tureens, if you wish, and reshape them on plates or in bowls with garnishes.

White Bean Pâté

This vegetarian pate has been a Martha Rose Shulman signature dish for decades.

Black Bean Pâté

This tastes like a very light version of refried beans.

Red Bean and Pepper Pâté

Spiced with paprika and cayenne and added red peppers for a Cajun twist.

Asparagus With an Italian Twist

   Italians have a way with this vegetable, both the pencil-thin stalks that grow wild in the countryside and the thicker cultivated varieties.

   Simply steamed or boiled, asparagus can be served with a range of condiments and sauces, from Parmesan and butter to anchovies and capers to gremolata – a mixture of finely chopped parsley, garlic and lemon zest. Italian cooks also use asparagus in risottos and toss it with pastas; they scramble the thin variety with eggs and use it to fill frittatas.

Asparagus is an excellent, low-calorie source of vitamin K, folate, vitamin C, vitamin A and nutrients like tryptophan, manganese and fiber.

Asparagus With Anchovies and Capers

Made with very thin asparagus, this dish is common in Italy and a neighboring region of Croatia, Istria.

Lasagna With Asparagus and Chives

Lasagna need not be assembled and baked. This version can be thrown together like any other pasta dish.

This dish is an Italian classic from the Lombardy region.

The Seafood Conundrum

The scientific dispute over what’s safe and what’s not has raged for many years, but I was heartened to see that even a watchdog group like the Environmental Defense Fund can find a range of fish and shellfish make for safe and sustainable choices. I know from experience that many of them can make for fine meals; I’ll be offering a few examples this week.

As for the best ways to cook fish, there are many. I tend to go for methods that don’t leave a lingering smell in my kitchen, such as roasting in a covered baking dish or in individual foil packets, poaching in a stew, or slow-steaming in the oven. I steam mollusks like mussels and clams in wine in a wide pan or a pot, and serve them with the broth. On warm nights, I love to grill fish outdoors

Easy Fish Stew With Mediterranean Flavors

This is a typical fisherman’s stew. No need to make a fish stock; water, aromatics and anchovies will suffice.

Spanish-Style Shrimp With Garlic

Serve with rice, or if serving in earthenware dishes, with crusty bread for dipping.

Grilled Sardines

If you’ve only had sardines from a can, you may turn up your nose at them. Fresh ones will change your mind. Brush them with olive oil, toss a few sprigs of rosemary onto a hot grill, and grill them.

Baked Halibut With Tomato Caper Sauce

This is a pungent tomato sauce that I learned to make in Provence. It goes well with any type of robust fish.
