Summer Fruit Galettes

As long as there are still peaches, plums, apricots, berries and nectarines to be had, I’m buying them up and making pies and galettes. A galette is a free-form pie, more rustic than a tart. Although they’re usually made with classic buttery pie dough or puff pastry, I’ve been working at developing a dough recipe that is delicate and tasty but not too rich. I decided that a yeasted dough could work, and came up with a formula that yields enough for two galettes but has only 60 grams of butter (about 4 tablespoons). The flavor is nutty and rich because of the whole-wheat flour, but the dough isn’t heavy. The trick is to roll it very thin, then freeze it right away so that it doesn’t continue to rise and become too bready, and also so that it’s easy to work with when you are ready to assemble the tart. The dough works beautifully for these free-form galettes.

Tomatoes Take Center Stage

There is little room in my repertoire at this time of year for dishes that don’t include tomatoes, but this week I kept it pretty simple.

   I tried a new recipe for roasting tomatoes. I roasted them for 2 hours at a low temperature (300 degrees), which didn’t dry them out completely but intensified everything about them. I snacked on them all week, and also put them through a food mill for sauce. They will definitely become a habit, along with the fresh tomato sandwiches I’ve been eating for lunch every day. This won’t stop until September.

Tomatoes Pack a Nutritional Punch

Tomatoes  receive a lot of attention from nutritionists largely because of a phytonutrient called lycopene. Studies have long suggested that lycopene, which is contained in the red pigment, has antioxidant properties. Now growers are raising and marketing “high-lycopene” tomatoes. Indeed, a company based in Israel has developed a dried cherry tomato, which it is calling a “raisin tomato,” that contains almost 100 times the amount of lycopene in a regular cherry tomato.

In many of this week’s recipes I’m using a technique that may be new to some of you. Rather than peeling, seeding and dicing the tomatoes, I grate them on the large holes of a box grater. This is a technique I learned in Greece; it’s used throughout the Mediterranean. Cut the tomatoes in half, squeeze out the seeds if instructed to do so, and rub the cut side against the grater. Don’t worry: the skin is tough and you won’t scrape your hands. When you feel the holes of the grater against the inside of the tomato skin, you’re done. It goes quickly, and it’s a nifty time-saver.

Neglected Tropical Diseases: Guinea-worm disease Up Date

Four years ago I wrote an article about Guinea-worm disease, one of the top ten neglected tropical diseases. Thirty years ago the former President Jimmy Carter’s foundation embarked on a program to eliminate the agonizing and debilitating parasitic disease that has plagued Africa for centuries. They are now close to eliminating it and it is Pres. Carter’s wish to see it gone before he is.

When former President Jimmy Carter announced Thursday that his cancer had spread to his brain, he also revealed he had some unfinished business he wants to see through.

“I would like to see Guinea worm completely eradicated before I die,” the philanthropist said. “I’d like for the last Guinea worm to die before I do.”

Carter went on to explain that there are currently only 11 cases of dracunculiasis, or guinea worm disease, in the world. That’s a precipitous drop from 3.5 million cases across 21 countries in 1986, when he first set out to conquer the disease through his nonprofit organization the Carter Center. [..]

When Guinea worm has been eradicated, it will be only the second time in human history that a disease has been totally wiped out. The first, smallpox, was eradicated in 1977, according to the World Health Organization. Experts from the Centers for Disease Control and Prevention estimate that Guinea worm will meet the same fate – a final piece in Carter’s legacy.

Beyond Pesto: New Ideas for Basil

Basil contains flavonoids that are believed to have some antioxidant properties; it’s an excellent source of vitamin K, and a very good source of iron, calcium and vitamin A.

Pots of Basil will also keep away flies although it is unclear why, possibly the fragrant oils. The oils have also shown to inhibit the growth of some pathogenic bacteria that has become resistant to antibiotics.

Greens for the Summer Heat

Spinach is the green that comes to mind for light summer dishes. It’s available year-round both at farmers’ markets and supermarkets, wilts in minutes, and afterward keeps well in the refrigerator.

In summer, you can use it for cold soups or quick omelets, or combine it with seasonal tomatoes in easy pastas. Spinach contains iron, vitamin A and vitamin C, manganese, folate, calcium, potassium and a variety of other nutrients.

One thing to note: The sodium content can be high in some brands of bagged spinach. A 3-ounce serving of Dole organic baby spinach, for example, contains 135 milligrams of sodium. The same amount from Fresh Express contains 65 milligrams. The difference may have to do with the solution that certain commercial producers use to wash the spinach.

If you do use bagged baby spinach, check the values on the package. A 3-ounce serving (85 grams) should not have more than 70 milligrams of sodium.

Pan-Cooked Summer Squash With Tomatoes and Basil

This Provençal summer dish is delightful as a starter or as a side dish with fish, chicken or cooked grains.

Spicy Grilled Zucchini

This mildly spicy dish from southern Italy can serve as an appetizer or side. Cut the zucchini on the diagonal into long, thin slices, or cut it lengthwise.

Cumin-Scented Summer Squash Salad

The summer squash is lightly steamed in this North African salad.

Marinated Zucchini Salad

Raw zucchini can be a dull ingredient, but when it’s very thinly sliced it marinates beautifully, especially in lemon juice.

Shells With Summer Squash, Corn, Beans and Tomato

You can use canned beans for this dish, but if you happen to have cooked pintos or borlottis in broth, use the broth for the pasta sauce.

An Ode to Runny Eggs

Today, I’m using unsalted butter (I bet we used margarine at camp), a thick slice of really good white or whole wheat country bread and a sunflower-yellow, pastured egg. My “grill” is a well-seasoned cast-iron skillet set on the stove and, after a long egg-in-a-hole hiatus, I’m smitten. I’d forgotten how utterly perfect this meal is.

Fried Chicken Stars in This Make-Ahead Meal

The usual strategy for a make-ahead summer meal is a spread of salads and poached fish, which is fine in June but grows wearisome by August.

Instead I suggest taking another path entirely: fried chicken.

A longtime picnic staple, chicken is one of the few fried foods that tastes as good at room temperature as it does warm. And with a few minor tweaks to the classic recipe, this version holds up particularly well, remaining crisp and well seasoned for hours out of the fryer.
