I used to insist on making a green salad to go with every meal. It is the way I grew up eating – in fact the first thing I learned to make in the kitchen was a vinaigrette, and my first kitchen tasks were preparing all of the lettuces and vegetables for our mixed green salads. Now my salads are not always green. This is especially true in winter, when root vegetables, roasted vegetables, grains and year-round vegetable staples like celery are often at the center of my salad plate.

For inspiration for this week’s salads, I looked at the Union Square Greenmarket website as well as some websites from farms, to see what fruits and vegetables may be arriving in your CSA baskets.

Kasha or Freekeh Salad With Roasted Squash, Pecans and Pomegranate

A delicious grain salad with a sweet and tart dressing that provides an unexpected use for roasted squash.

Celeriac, Celery and Carrot Remoulade

A grated salad that is not quite as creamy as the dish that inspired it.

Baby Greens With Balsamic-Roasted Turnips and Walnuts

The turnips in this salad can work both warm or cold.

Orange and Radish Salad With Pistachios

Pistachios and their oil go beautifully with the oranges while radishes offer a crisp, pungent contrast.

Not Your Bubbe’s Kasha

On Sunday I cooked up a big pot of nutty-tasting kasha, the cooked cereal made with toasted buckwheat groats. I enjoyed it all week. I stirred some into a frittata along with leeks and spinach, added it to two different salads and to buckwheat pancakes. I ate it plain, with a little milk and maple syrup as porridge for breakfast, and made a dinner in a bowl of kasha topped with mushroom ragout and kale. [..]

But this week everything changed when I bought a box of medium-grain kasha at the supermarket and took another stab at it. These groats were cracked, like bulgur, something I hadn’t seen before. (Indeed, I had reported years ago in this column that it was the medium cut of the grain that made them mushy; now I am convinced that I had it wrong, and that the cooking method also plays a key role). Cracked kasha (the package says “medium granulation”) is still a whole grain – nothing has been removed – but the grains have more exposed surfaces and are smaller than the whole pyramid-shaped buckwheat groats that I usually cook. I followed the directions on the box, mixing the buckwheat with a beaten egg and toasting it in a dry pan over high heat before adding hot water, salt and a little butter and simmering for 10 minutes. Then I did what I always do when I cook grains (and this instruction isn’t on the package): I let them sit for 10 minutes with a tea towel placed between the top of the pan and the lid to absorb steam from the grains. The kasha turned out perfectly – dry and fluffy, with the wonderful nutty/earthy buckwheat flavor I love.

I used my kasha all week for various dishes, including the big bowl with mushroom ragout and kale that follows these basic cooking instructions.

Tobacco Companies

In a 20 minute segment of HBO’s “Last Week Tonight,” host John Oliver lights up an industry giant, tobacco and how it uses the courts to suppress the laws of the poorest countries to restrict cigarette sales and inform their citizens of the health hazards of tobacco use. John also introduces a new mascot and a tee shirt, Jeff the Diseased Lung, for an adverting campaign

As Last Week Tonight host John Oliver notes early in his incredible, 20-minute examination of the global battle being fought over tobacco advertising, the smoking rate in the United States has dropped from 43 percent in 1965 to 18 percent today thanks to strict laws outlawing cigarette ads. With America largely kicking its smoking habit, the tobacco industry has been forced to make up the revenues abroad, leading to court battles in countries like Australia, Uruguay and Togo, one of the 10 poorest nations in the world.

Oliver’s takedown also focuses on the extreme lengths companies like Philip Morris International are going to place their products in the hands of the youth, including a Marlboro-sponsored kiosk outside an Indonesian school where teens can purchase a single cigarette for a dime.

Countries have responded to Big Tobacco’s unorthodox marketing with laws that allow government to place grotesque images of smoker’s lung and blackened teeth on cigarette packaging, but even those measures have resulted in threats of billion-dollar lawsuits from the tobacco giants in international court.

One such battle is being waged in Togo, where Philip Morris International, a company with annual earnings of $80 billion, is threatening a nation with a GDP of $4.3 billion over their plans to add the harsh imagery to cigarette boxes, since much of the population is illiterate and therefore can’t read the warning labels.

Last Week Tonight with John Oliver: Tobacco

The tobacco industry derives much of its legal power from treaties like the World Trade Organization

That’s right, a company was able to sue a country over a public health measure through an international court. How the f*ck is that possible?

Apparently, PMI had dug up a treaty from 1993 that stated that Australia couldn’t seize Hong Kong-based companies’ properties, so before it started litigation, it moved its Australia business to its Hong Kong-based division and then sued claiming the property being seized was its trademarks on its cigarette packages.

But it wasn’t just PMI who came after Australia. Three countries – Honduras, the Dominican Republic, and Ukraine – also filed complaints with the World Trade Organization against Australia’s plain packaging law. However, it turns out, Ukraine has zero trade with Australia of any tobacco products. [..]

Not surprisingly, these complaints are fully backed by PMI, who will even cover some of the legal costs. But Big Tobacco doesn’t just go after big countries; the small South American country of Uruguay was also a target. Oliver points out that it’s a country we think so little about that the audience didn’t even notice he was deliberately highlighting the wrong country on a map to prove his point.

It is treaties like the WTO that harm struggling counties and the poorest populations around the world. President Barack Obama would like to further that harm with even bigger “free trade” like the Trans-Pacific Partnership (TPP) and Transatlantic Trade and Investment Partnership (TTIP). These treaties will cause job losses, lower wages, higher drug prices, endanger the environment and food supplies. The treaties also would give companies, like Phillip Morris International, even more power to sue governments if those governments’ policies cause a loss of profits, undermining democracy. They are being negotiated in secret and the public only knows about them because Wikileaks released drafts of some of the worst clauses that it had acquired.

Cauliflower is a vegetable that I have no qualms about buying on impulse. It keeps very well in the refrigerator – I have made perfectly good meals using florets I found lingering in my produce drawer that had been there for more than a week. Not that I recommend this approach, but it is good to know that you need not use it up right away, especially when you find large heads weighing anywhere from 1 1/2 to 2 pounds.

How Big Pharma Markets to Doctors

John Oliver opened the second season of HBO’s “This Week Tonight” with a humorous but sobering segment on how big pharmaceutical companies market their drugs to doctors, spending an estimated $24 billion per year in direct marketing.  In his witty but serious way, he explains that 70% of Americans take at least one prescription drug, and spent $329 billion, $1000 per person, on those medications in 2013. John quipped, “Walter White could have made more money cooking up rheumatoid arthritis medication.”

Big Pharma tactics include everything from lunch, to sexy sales reps to expensive dinners with other doctors who pitch the sale as “thought leaders.” The drugs are often pushed for “off label” use, that is, use that the FDA has not approved and most of the reps know very little, if anything, about the drugs that they’re pushing.

Drug companies are like high school boyfriends, they’re more interested in getting inside you than in being effective once they are there.

One a the good things that the Affordable Care Act did is it created a web site, OpenPaymentsData.CMS.gov that which enables average citizens a chance to search for perks given to doctors by pharmaceutical companies.

True Grits

Most life-changing food experiences involve exotic or high-end foods like truffles. But my latest life-changing food experience involved humble grits and polenta – cornmeal mush. [..]

And I have long been a polenta enthusiast, but I was mostly content with my generic oven-baked polenta. But Italian heirloom corn, ground with 17th and 18th century artisan techniques, is an altogether different dish. I cook it on top of the stove, not in the oven. It has a creamier texture and more intense corn/floral flavor and aroma than any polenta I have cooked in the past.

The Anti-Vaxxer Hoax

In the last few years there have been increasing reports of outbreaks of childhood diseases that were thought to have been eradicated, or at least very rare occurring in UN-vaccinated migrant populations and third world countries. In the last few months, there have been outbreaks of pertussis and measles in cities across the US. This is troubling and the main cause appears to be a growing group of people who have fallen for a debunk premise that vaccines for these diseases were somehow linked to the rise in autism. The British doctor who wrote that paper has been prosecuted for fraud and has lost his license to even practice medicine. Let’s be very clear about these vaccines. They are safe and they work. There is no debate, or at least there shouldn’t be.

MSNBC’s “All In” host Chris Hayes is joined by Retro Report‘s Bonnie Bertram to trace the current anti-vaccine movement back to one debunked, discredited study published in 1998.

Yet, the myth persists and it is putting not only the children whose parents refuse to vaccinate them but everyone else. Now, right wing politicians who are vying for the 2016 presidential campaign have been pandering for the votes of these ignorant people. The hypocrisy of the politicians reeks:

The vaccination controversy is a twist on an old problem for the Republican Party: how to approach matters that have largely been settled among scientists but are not widely accepted by conservatives.

It is a dance Republican candidates often do when they hedge their answers about whether evolution should be taught in schools. It is what makes the fight over global warming such a liability for their party, and what led last year to a widely criticized response to the Ebola scare.

As concern spread about an Ebola outbreak in the United States, physicians criticized Republican lawmakers – including Mr. Christie – who called for strict quarantines of people who may have been exposed to the virus. In some cases, Republicans proposed banning people who had been to the hardest-hit West African countries from entering the United States, even though public health officials warned that would only make it more difficult to stop Ebola’s spread.

Yet, they think that it’s OK for parents not to vaccinate their children against diseases that are far more contagious and killed more than the the two people who contracted Ebola from Eric Duncan who died of the disease in Dallas.


There was one far right presidential hopeful that actually said something that made sense:

Ben Carson, a potential Republican presidential candidate, on Monday strongly backed vaccinations, splitting from two possible rivals who suggested parents should decide whether to immunize their children.

“Although I strongly believe in individual rights and the rights of parents to raise their children as they see fit, I also recognize that public health and public safety are extremely important in our society,” Carson, a retired pediatric neurosurgeon, told The Hill in a statement.

“Certain communicable diseases have been largely eradicated by immunization policies in this country and we should not allow those diseases to return by foregoing safe immunization programs, for philosophical, religious or other reasons when we have the means to eradicate them,” he added.

There should be few exemptions to getting vaccinated and those should only be for persons who have a medical contraindication to vaccination, not religion or some personal philosophy. The ignorant and dangerous anti-vaccination movement needs to be stopped and all children eligible for vaccines should get them, as soon as possible.

Chefs are coming up with all sorts of inspiring ideas for grains, and I was lucky enough to learn about some of them at last November’s Whole Grains: Breaking Barriers conference organized in Boston by Oldways and the Whole Grains Counsel. [..]

One of the new old grains that peaked my interest at the conference was freekeh, a green wheat product that is popular throughout the Middle East but seems to be just catching on here. It has a smoky/earthy flavor, the result of the production process that I describe in this week’s freekeh salad recipe, and it is bound to win over the hearts and palates of those who can still appreciate wheat.

Cracked Farro Risotto (Farrotto) With Parsley and Marjoram

The farro lends flavor and results in a more robust dish than a rice risotto.

For many years, McDonald’s and Burger King fought for fast-food dominance based on demand for their signature hamburgers, with the epic struggle between the Big Mac and the Whopper becoming a fixture of the Burger Wars. These days the combatants have shifted their focus to a different menu item to woo diners: chicken nuggets.

Burger King in early January brought back its 15¢ chicken nugget promotion, offering a 10-piece box for $1.49, or about half the regular price. The deal, introduced for the second time in three months, was revived soon after McDonald’s rolled out a campaign trumpeting a 50-piece order of Chicken McNuggets for $9.99, or 20¢ each. [..]

The chicken nugget price war comes as fast-food restaurants are turning to discounts and new menu items to keep millennials from fleeing to fast-casual eateries such as Chipotle Mexican Grill. With wholesale beef prices near a record-up 40 percent since 2012-McDonald’s and Burger King are hoping cheaper nuggets will help boost sales to price-sensitive diners.

MSNBC’s Chris Hayes, host of “All In,” gives s guide to the “war.”

Don’t rush off the either of these fast food joints too soon. Hayes and his guests, CNBC contributor Ron Insana and Professor Raj Patel, explain the underlying factors, plus some health concerns.

There are a lot of calories, salt and other stuff in them there nuggets that you might want to think twice about consuming on a regular basis.

Chicken Stews, to Savor or Store Away

I wanted each of these stews to feature a nutritious vegetable along with the chicken and aromatics. In this way they are truly one-dish, nutrient-dense meals. Though I suggest serving them with rice, other grains or pasta, if carbs are an issue, know that these stews are very satisfying on their own.

I used skinless legs and boneless, skinless thighs for my chicken stews, and I sought out free-range organic chickens. While chicken breasts are lower in fat than the legs and thighs, they dry out when you stew them for very long. You can increase or decrease the number of chicken pieces according to your needs. If you’ve frozen a stew, it’s best to thaw it overnight in the refrigerator for the next night’s dinner. If the stew doesn’t thaw completely, heat gently in a casserole or use your microwave’s defrost function

Pastries to Ring In the New Year

I’ve covered a number of good luck foods for the New Year in the Recipes for Health column, including beans, black-eyed peas and lentils, and greens. This year I had a lot of fun playing around with recipes for another type of good luck food: ring-shaped breads and pastries.

The rings symbolize the year’s coming full circle, and also eternity. Doughnuts come to mind, but that doesn’t quite fit the Recipes for Health profile. Neither do most bagels, even most whole wheat bagels (which are usually white bagels with a little brown flour thrown in).
